I know as soon as Labor Day passes, most people start reaching for cozy fall recipes. And while I’m all in for crisp mornings and the smell of apple cinnamon, I’m not quite ready to let go of summer just yet.

Tomato season is still going strong, and I plan to enjoy every last bite. So, today I’m sharing three of my favorite tomato recipes I grew up eating.

They’re Turkish by tradition, but you’ll find similar versions all across the Mediterranean.

And the best part? Each one comes together in 15 minutes or less.

Your End-of-Summer Tomato Fix

Turkish Ezme

This is what kebab restaurants serve with any meat/kebab order. Some people call it the Turkish salsa, but for me, it is a summer staple that I serve with pita bread for happy hour.

Turkish Shepherd Salad

This might be the easiest salad ever created. So easy that a shepherd can make it in minutes while tending his herd.

Piyaz - Turkish White Bean Salad

Grab some summer tomatoes, boil some eggs, and open up a can of white beans. This is going to be your favorite end-of-summer lunch.
